Ingredients required for Mathri recipe:
2 cups all-purpose flour (Maida) – 250 grams
½ cup whole wheat flour (Atta) – 60 grams
3 tablespoons ghee or 3 tablespoons oil – any neutral tasting oil
5 to 6 tablespoons water or add as required
2 teaspoon carom seeds (ajwain)
2 teaspoon black peppercorns – crushed coarsely or kept whole if you prefer
2 teaspoon dry fenugreek leaves Kasuri methi
One teaspoon of cumin seeds
1 pinch asafoetida (hing) – optional
1 pinch baking soda – optional for frying but do add if baking the mathri
Salt as required
Oil as required, for deep frying
Preparation Method for Mathri recipe:
1 Take a pan and add oil to it.
2 When heated up the oil add all-purpose flour, whole wheat flour, dry fenugreek leaves, baking soda and pinch of salt and all the spices.
3 Then with the help of a spoon mix the mixture and when the mixture is cool to handle mix in the flour with your fingertips.
4 The mixture should resemble breadcrumbs.
5 You have to do this, again and again, this step. This will make the flaky texture.
6 Then add one to two tablespoons of water at a time and mix the dough well.
7 We do not knead it like a roti just mix the water in the dough till it comes together.
8 When it can be easily gathered together into a ball. Cover it with a towel and leave it for 30 minutes to set it aside.
Rolling Mathari: Mathri Recipe
1 Take a deep pan and add oil to it.
2 When heated up the oil adds small balls from the dough and with your palms roll them lightly.
3 Tip: you can cover them with a paper towel so they do not dry out.
4 With the help of a rolling pin flatten each ball.
5 Do the same process with all dough.
Frying Mathri: Mathri Recipe
1. We have to fry the mathri in medium hot oil. If oil is too hot it will turn brown from out and if the oil is cold then the mathri will absorb a lot of oil.
2. So make sure the oil will be medium hot.
3. Fry the mathri from both sides well till it turns crispy and golden.
4. Drain mathri on paper towels and store them in an air-tight container box.
5. Serve this mathri with ginger tea or evening tea as evening snacks.
